Okay, so I have a weakness for Mexican and southwest food. This casserole is so good, I have to make it a couple of times a month! Santa Fe Chicken combines chicken, sour cream, black beans, and salsa in a savory and super easy casserole. Serve it with Scandinavian Cucumbers for a cooling (and multi ethnic!) complement. Finish the meal with No Bake Peach Crisp topped with vanilla ice cream. Yum.
