Dried apricots, couscous, and the flavors of the Middle East make this exotic chicken salad recipe so delicious.

Ingredients:
- 1/4 cup vegetable oil
- 1/3 cup orange juice
- 1 tsp. cumin
- 1 tsp. dried coriander
- 1/2 tsp. turmeric
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- 1/4 tsp. pepper
- 1-1/2 cups uncooked couscous
- 2/3 cup slivered dried apricots
- 1-1/2 cups boiling water
- 2 (12 oz.) cans chicken, drained
- 11 oz. can mandarin oranges, drained
- 1/3 cup slivered almonds, toasted
Preparation:
In small bowl, for salad dressing, combine oil, juice, cumin, coriander, turmeric, salt, cinnamon and pepper and blend well with wire whisk. Set aside.In large bowl, combine couscous and apricots; add boiling water and cover. Let stand for 5 minutes, then fluff with fork.
Add chicken, oranges, almonds and salad dressing and toss gently to coat. Cover and chill if desired. 4-6 servings
