This delicious and unusual main dish salad recipe is fun to make with different kinds of tomatoes and a simple dressing. The yogurt in the dressing isn't meant to make it a creamy coating; rather it holds the garlic salad dressing in suspension long enough for the rice and lentils to absorb the flavor.

Ingredients:
- 1 cup lentils, washed
- 1 cup Jasmati or Basmati rice
- 1 (20 ounce) package frozen cheese tortellini
- 1/2 cup yogurt
- 3/4 cup roasted garlic Italian vinaigrette salad dressing
- 2 yellow tomatoes, chopped
- 1 pint cherry tomatoes
- 1 red bell pepper, chopped
- 2 cups cubed Havarti cheese
Preparation:
Cook lentils according to package directions until tender. Cook rice according to package directions until tender. And cook tortellini according to package directions until tender.Meanwhile, combine yogurt and salad dressing in large bowl and add remaining ingredients. As the lentils, rice, and tortellini finish cooking, drain them and add to the salad, stirring gently to coat. Serve immediately or cover and refrigerate up to 3 days.
