This excellent recipe is packed full of flavor. The sour cream added at the end makes the dish so rich and creamy.

Ingredients:
- 1 Tbsp. olive oil
- 1 lb. pork tenderloin, cut into 1" pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 green bell pepper, chopped
- 4 cups uncooked farfalle (bow tie pasta)
- 2 Tbsp. sugar
- 2 tsp. chili powder
- 1/2 tsp. salt
- 28 oz. can diced tomatoes, undrained
- 8 oz. can tomato sauce
- 1 cup sour cream
Preparation:
In heavy skillet, cook pork tenderloin pieces, onion, and garlic in olive oil until tenderloin pieces are lightly browned. Add green pepper and cook another 3 minutes. Add remaining ingredients except sour cream. Break up tomatoes with spoon.Heat to boiling and reduce heat. Cover and simmer about 20 minutes, stirring frequently, until pasta is tender. Uncover and stir in sour cream. Heat a few minutes, but do not boil. Serves 6
